Zucchini Keto Rolls


Ok, let’s be honest hackers, how is everyone keeping up with their 2022 healthier eating resolutions? Healthy eating is part of who we are as a society now a days, the glutenous eating / no care for nutritional facts, doesn’t resonate with the majority anymore - with the exception of holidays and Sunday game days of course. But, something that keeps being relevant is that flavor shouldn’t lack when it comes to healthy eating, and that, we can change with a hack or two ;)
Zucchini rolls gained some hype, but they quickly become bland, and old news. Swapping pasta for zucchini in these easy to assemble roll ups make them low-carb and keto friendly - so to make them flavorful and a new go to staple - grab your Spezia hack! Spezia hack takes the best of Italian dry herbs and spices all bottled up & ready to use generously without having to measure out your oregano. Zucchini Rolls
Marinara- 1C
Zucchini- 4ea
Olive oil- 1 Tablespoon
Spice Hack Spezia- 1 Tablespoon
Ricotta- 1C
Egg- 1ea
Parmesan- ½ C
Basil- 3-4 leaf’s
Mozzarella- ½ C
Steps
Slice Zucchini lengthwise
Spray or grease baking pan
Place zucchini in pan and drizzle olive oil
Season with Spice Hack Spezia Hack, and Salt
Bake for 20 Minutes at 350 degrees to soften them up
Using a mixing bowl, mix ricotta, parm and egg
Mix the cheese and egg planed, season then mix and reserve
Once the zucchinis are soft, remove from the oven and let them cool down for 5 minutes
Spread marinara sauce onto the bottom of an oven-proof skillet; set aside
Spread 1 tablespoon ricotta mixture evenly along each zucchini slice
Roll up and place in the prepared skillet; repeat with remaining zucchini slices and filling
Top the rolls with a spoon of marinara sauce, more Spice Hack Spezia, and mozzarella
Place into oven and bake for 25-30 minutes, or until lasagna rolls are heated through and the cheese is beginning to brown.
