Wellness Soup

 

Healthy soups and broths are having a moment, and quickly becoming the go-to healing food for many. Aside from being a staple “go-to” anytime you feel unwell regardless where you call home, Wellness soups are light and filling, but also wonderful for mental calm, clarity, harmony, and balance.

This is a true one pan recipe, with nothing but the best ingredients. In this recipe we’ll have Spice Hack 100x35 + Unhackable team up together as both hacks bring different layers of flavor that you wouldn’t normally find in that boxed soup hiding in the back of your pantry.

Because we are cooking all of the ingredients together vs. separately in this 1 pan recipe,  the spice selection is important to bring the flavors out of every ingredient. This is a great recipe to batch soups for a couple of days, and don’t worry if you have leftovers, you can always freeze for future use, or use this soup as the perfect base for an amazing pasta or baked chicken dish.

Wellness Hacker Soup

Zucchini, medium dice- ½ ea

Carrot, medium dice- ½ ea

Cherry tomatoes- 1 ½ C

Celery, medium dice- 2ea

Butternut squash, frozen medium dice- 1 ½ C

Red bell pepper, sliced- 1ea

Vine ripened tomatoes, sliced in half- 2ea

Heads garlic, tops sliced off- 2ea

Olive oil- 1 Tablespoon

Spice Hack 100x35

Spice Hack Unhackable

Salt TT

Veggie stock, water or liquid of your preference to blend soup- 1 ½ C

 

Steps

Preheat the oven to 400F.

Add all vegetables to a parchment lined sheet pan or well-oiled cast iron skillet

Top with the oil and season with Spice Hack 100x35 and Unhackable

Toss until the vegetables are well coated

Place the pan in the oven for 45 minutes, until the vegetables are soft

Remove from the oven and allow to cool until safe to handle

Remove the garlic heads, then transfer the remaining contents of the pan to a high-speed blender. Squeeze the garlic cloves out of the heads and discard of the skins.

Add the veggie stock or choice of liquid to the blender

Combine until a smooth soup is formed, more vegetable broth as desired

Take it to another level with a sprinkle of Spice Hack Applewood Smoked Salt as a garnish
